My mother-in-law made some granola for part of the breakfast she served last weekend (along with a quiche that Matt and I are going to try on Saturday). She said it was so easy, and she only used maple syrup instead of adding oil like most granola recipes. I couldn't remember exactly what she put in hers, so I made up my own this morning.
3 cups rolled oats
1-ish cup slivered almonds
1-ish cup chopped pecans
(I say 1-ish because they were closer to one and a half cups.. I knew I wouldn't be putting walnuts into my granola, but I still wanted it to be chunky and nutty.. feel free to add walnuts, you can do 1 cup of each if that's the case)
1/2 cup coconut flakes
1 cup maple syrup
handful or so of raisins
(raisins are just about the only dried fruit I like, but if you have a more advanced palate than I do, throw some dried cranberries or banana slices in.. I'll stick with my raisins)
Combine all ingredients except raisins (or whatever fancy dried fruit you want to add) in a bowl, mix together, and spread on a greased cookie sheet. Bake at 300 degrees for 30 minutes, stirring once after 20 minutes. Once done, add raisins, mix, allow to cool, and enjoy! I ate mine topped with vanilla yogurt. You can eat yours however you want.. cranberries and all.

Alright, alright, I just can't help myself.
You have to see how cute she is "playing" with her toys!
She usually just stares, but the other day she looked like she was smiling at them, and she was cooing and screeching and kicking her feet like she was having the time of her life. She probably was, considering she's only experienced one month of it.
Oh, right, she turned one month old yesterday! I wanted to sneak a photo shoot into our day, but I picked yesterday to work on changing her schedule. We're using BabyWise, a book about giving your baby the comfort of being on a flexible "schedule" that is broken down into an eat-wake-sleep cycle. I'll get into that another time, it's worthy of having a blog post of it's own. Long story short, it was a rough day, so pictures never happened, but I know the end goal is a happy, confident baby girl. Maybe today will be a good day to document her one month birthday!
The granola sounds really good, I may try it myself.
