Popcorn Chicken!


I had a few people ask about the recipe I use for popcorn chicken, so I thought I'd share with everyone. It's so easy, so yummy, and so NOT healthy :)

It's from a cookbook called "The Starving Students' Cookbook". I still use it because my wallet and my cooking skills still kinda look like a starving student's. I don't always look back to the recipe, so every time it's a little different and only has the ingredients that happen to be in my kitchen at the time.

NEED:
4 skinless, boneless chicken breasts, cut into 1-inch cubes (I've never used 4, only 2 because it's just for me and Matt)
1/2 cup milk (poured into small bowl)
1/2 cup flour (last time I used some Panko bread crumbs along with the flour)
couple shakes each: black pepper, salt, paprika (we just use Susie Q's)
1/2 cup vegetable oil

STEP 1: In small shallow pie plate or dish, mix together flour and seasonings.
STEP 2: Heat oil in skillet on high heat until very hot.
STEP 3: Dip chicken into milk and then into flour mixture.
STEP 4: Carefully lay chicken into hot oil. (We have one of those oil screen things so it doesn't pop on you the whole time you're cooking.. it's perfect for bacon too!) Turn and cook until golden brown and crispy all over. Drain on paper towel.

We always eat ours with a variety of dips.. because we're fancy like that. Ranch, BBQ sauce, or this so-simple-it's-ridiculous honey mustard recipe:

1/2 cup honey
1/4 cup spicy hot mustard
stir together
(keeps 1 week in the fridge)
